Healthy Halloween Snacks to Help Stay on Track

Healthy Halloween Snacks!

Halloween is a fall favorite among most people, with dressing up, and gorging yourself on candy! However, its not as fun for our waistlines! Below are 2 recipes, one for a drink, and one for a healthy snack that is fall and Halloween themed! All the Halloween fun without as much impact on your weight loss goals!

1. Mexican Pumpkin Punch

Time: 35 minutes (Prep: 20 minutes, Cook 15 minutes)

Ingredients: 2 cups packed dark brown sugar, 4 cinnamon sticks, 1 29 ox. Can pure pumpkin, 2 limes, Pineapple chunks or pecans for serving (optional)

Directions: Combine 12 cups water, the brown sugar, and cinnamon sticks in a large pot and bring it to boil (medium high heat) until sugar dissolves. Stir in the pumpkin and return to a simmer. Remove the zest from limes in wide strips using a veggie peeler, add zest to pot and simmer 15 minutes. Let cool, then refrigerate until liquid is cold and pumpkin pulp settles to bottom (~2-3 hrs.) Ladle the liquid into a strainer over a pitcher to remove the pulp and zest. Discard pulp and lime zest, and return cinnamon sticks to the punch.

** If you’re feeling extra adventurous, add some pineapple or pecans, and a splash of rum!

2. Chocolate Dipped Fruit

Time: 20 minutes (Prep: 15 minutes, Cook: 5 minutes)

Ingredients: 4 oz. bar of Dark Chocolate, Dried mango or Papaya pieces.

Directions: Finely chop a 4 oz. bar of dark chocolate; microwave on 50% power until almost melted (~2 minutes). Stir until smooth, and dip dried mango or papaya pieces in the chocolate, and place on parchment lined baking sheet. Chill until set (~10 minutes)
